For Biology, NCERT is everything. I repeat, everything.
For Physics and Chemistry, conceptual knowledge of the subject is important and most of the times, it can't be built by reading mere NCERTs.

Difficulty level of AIIMS exam is not that difficult. Personally I found it just a bit tougher than NEET.
JIPMER exam was a hell more difficult. But what matters is your rank which depends on competition. Easier the exam, more is the cutoff.
150 is a safe score. (Max 200)

No matter where you take coaching in, you have to know Microbiology,biotechnology,carbonyl compounds,atomic structure,circuit diagrams on inductance,capacitance and electromagnetism,you cant expect to crack neet

Yes. Do read each and every line and understand the concept. Maximum questions of chemistry are from NCERT textbooks.
In case of biology nearly all questions are from NCERT textbooks only infact assertion reason type questions are also set from ncert book only. So read it by heart. for biology

No! NEET and AIIMS are separate medical entrance exams. NEET qualifies you to take admission in almost all medical colleges in the country apart from AIIMS and JIPMER which still continue to conduct their own exams for admission into their institution.
